Chocolate Chip Pancakes and Apple Cider Syrup

This morning my boyfriend and I had a craving for pancakes. It was a nice blizzard-y morning, so it felt nice to make a big breakfast while it snowed outside. Anyways, this is a pancake recipe we always use. It makes about nine small/medium pancakes.

We also made our own syrup, because personally, I don’t really like maple syrup. I find it too sweet sometimes. Anyways, I don’t know where these recipes came from (found during random internet searches), I’ve had them for a while but they’re both yummy!

Chocolate Chip Pancakes

  • 1 1/2 cups of all purpose flour.
  • 3 1/2 teaspoon baking powder.
  • 1 teaspoon salt.
  • 1 tablespoon sugar.
  • 1 1/4 cups of milk.
  • 1 large egg.
  • 3 tablespoons of butter, melted.
  • Chocolate chips.
  • 1 teaspoon of vanilla extract.

1. In a large bowl, sift flour, baking powder, salt, and sugar. Make a well in the middle and pour in the milk, egg, and melted butter. Mix until smooth.
2. Heat a frying pan to medium heat. Pour or scoop in the batter onto the frying pan for each pancake.

Apple Cider Syrup

  • 2 cups of apple juice  (or cider).

  • 1 cup of sugar.


  • 1/4 cup of butter.


  • 2 tablespoons of cornstarch.


  • 2 tablespoons lemon juice.


  • 1/4 teaspoon of cinnamon.


  • 1/4 teaspoon of nutmeg.

1. Mix sugar, cornstarch, cinnamon, and nutmeg in saucepan.
2. Pour in juice (apple and lemon).
3. Mix and bring saucepan to a boil, stirring constantly. Your cornstarch will start to thicken up here.
4. Once saucepan boils, stir constantly for a minute before taking it off the heat.
5. Once removed from the heat, stir in the butter.

This apple cider syrup was ah-mazing. I didn’t put in the whole cup of sugar because the apple juice we used is a generic brand one pumped full with sugar. We were a bit worried because neither of us have ever used cornstarch before and it wasn’t thickening, but once the syrup boiled it started to really thicken up! It was really good, and tasty. We were a bit worried it wouldn’t pair well with the chocolate chip pancakes but they were really good together. There was actually a lot of sauce left over, and I’m thinking it might be nice to bottle it and save it for the next time we want pancakes.

Anyways, I know lots of people have their own pancake recipes, but I felt this one was really tasty and the syrup was really good too!
